Glucono Delta Lactone (GDL)
Glucono-delta-lactone (GdL) is a food-grade, slow-release acidic coagulant (E575) used to produce soft, firm, and smooth-textured paneer, often preferred for its uniform acidification and improved yield compared to traditional acids. GDL is a neutral cyclic ester of gluconic acid, originating from fermentation of glucose. It is separated from the acid by crystallisation.
